Crispy oven-baked chicken tenders

Oven-baked chicken tendersChicken tenders are a main staple on the list of kid-approved items many families rely on for easy week night meals.  Finger food that’s dippable and can be served quickly with almost anything – what’s not to like?

This recipe for homemade crispy, oven-baked chicken tenders from Rebecca Wauldron, Executive Chef at Busch’s Fresh Food Markets, is not only something your kids can help making, but they will actually enjoy eating them, too.

And because they’re baked, not fried, they are much better for you than fast food versions and many of the freezer varieties, as well!

Crispy oven-baked chicken tenders

Yield: 4 servings

Crispy oven-baked chicken tenders ingredients

Ingredients:

  • 1 cup all-purpose flour
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon sea salt or Kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 ½ pound chicken tenders
  • 2 large eggs, lightly beaten
  • 2-1/2 cups panko (Japanese breadcrumbs)
  • Olive oil cooking spray
  • Ranch dressing, BBQ sauce or favorite sauce for serving

Instructions:

Preheat the oven to 400 degrees.

Line a sheet pan with parchment and lightly spray with cooking spray. Place the flour, paprika, chili powder, salt, black pepper, and cayenne pepper in a bowl and mix to combine.

Place the chicken tenders in the bowl of flour and toss them to coat.

Place the egg in a separate bowl and the panko breadcrumbs in a third bowl.

Shake the excess flour off of the tenders and, one at a time, dip each chicken tender first in the egg and then in the panko breadcrumbs. Make sure to press the breadcrumbs onto the surface of the chicken tenders so that they stick.

Place the coated tenders on the prepared baking sheet and spray them with the cooking spray.

Place the tenders in the heated oven and bake for 10-12 minutes or until the internal temperature of the tenders reaches 160 degrees and the outside is crispy.

Serve with sauce of choice.
